In Fez, in the heart of the working-class neighbourhoods where the history of the place blends with everyday life, the Bouissouifa hammam is now being reborn with a renewed sense of elegance. Long regarded as a run-down establishment with a dubious reputation — I myself had a rather negative experience there about ten years ago — it has undergone a complete renovation that has restored it to its former glory.


The hammam is not merely a bathroom: here, in the purest Moroccan tradition, it is all about heat and humidity. The walls, clad in green zellige tiles and tadelakt, capture and diffuse the steam in an enveloping atmosphere. The light, filtered through small openings, gently passes through the swirling steam, creating an almost timeless ambience.

The layout now follows the traditional sequence: a discreet antechamber, a cool room to prepare the body, then the hot room, the living heart of the hammam. There, the humid heat takes effect gradually: it opens the pores, deeply relaxes and invites you to slow down.

The session follows an unchanging ritual. It begins by soaking up the steam in the heat (skhoun), sitting on the hot stone, whilst splashing water over oneself to acclimatise the body. Next comes the application of black soap (saboun beldi), a rich and creamy olive paste that prepares the skin. After a few minutes, the kessa glove scrub reveals its full intensity: the skin is freed from impurities in a gesture that is both rough and deeply regenerating.

The ritual can be extended with a ghassoul wrap, a Moroccan clay with purifying properties, often mixed with rose water or orange blossom water, before a final rinse with cooler water that tones the body and closes the pores.

One of the remarkable features of the Bouissouifa hammam remains its water, drawn from underground springs. Soft and low in calcium, it is gentle on the skin and enhances the feeling of purity that accompanies the entire session.

Despite this profound transformation, the place retains its soul: a popular, authentic clientele, and a simple, warm welcome.

More than just a renovated hammam, Bouissouifa has once again become a vibrant space, true to the spirit of the traditional baths of Fez.
